Once a month we offer wetstone sharpening classes at Coutelier. We believe this style of sharpening proves to be far superior to other methods. This class is an introduction into the foundational techniques of Japanese wetstone sharpening, knife care, and stone maintenance.
The class is meant to be a base to build upon your wetstone sharpening skills, should you be a beginner or someone looking to dial in the finer techniques of the process. Please keep in mind that you will not leave the class being a master sharpener. Our goal is to provide you with the tools necessary to build upon your technique, so that you may leave with a confident sense of the building blocks necessary to hone in this skill. It takes time do this properly, and repetition is key for long term edge retention and sharpening success.
You will be provided a #1000 grit stone as well as a #6000 grit polishing stone for your use during the class. Stones are available for purhase from the class at 50% off. You are responsible for bringing your own knives, but please, bring no more than 2-3 knives per person.
